Fiddleheads! Hooray! Not only are they fleeting and extremely local, but they are one of the very first fresh vegetables that becomes available in the spring. They are the harbinger of more great seasonal dishes to come, and I love them both for their delicious fresh flavor and for the happy tidings they bring.
Served above in a salad of baby greens, apple, walnuts and blue cheese, with a dijon vinaigrette.
