We Win at Root Cellaring!

As I was prepping these veggies for dinner last night it hit me; our root cellaring was a success! It is April and I just pulled these beautiful, tasty and perfectly firm garden vegetables out of our root cellar! So they survived in semi-stasis down there in the cool, dark and damp for six months.  And they were delicious with great sweetness and flavor, so much better than what you can get in the stores.  Amazing!  Sadly though, not everything fared as well as the leeks, potatoes, and carrots.  The acorn squash look like big squishy fuzzy science experiments, and I don't even want to talk about the turnips.  I think it was too wet down there for those guys, so next winter we'll have to figure something else out for them.  But overall I am very happy with the results.  Hooray!

  1. Hurray! That leek looks totally amazing. We have our squash in a pretty dry cool place. We lost a few but have one big white one left. Which reminds me, we are probably really pushing our luck it this and should eat it this week...

  3. Oops, typo! Isn't the leek amazing? That's one of the one's we replanted in a tub of dirt in the root cellar after we dug it up from the garden. And it is so wet down there we only had to water it once all winter!
